QUINOA SALAD WITH MIXED VEGGIES

Ingredients for 4 servings


SALAD

  • 1 1/2 cup Quinoa, uncooked (2 cups cooked)

  • 6 green onion (stem)green onion, scallion, ramp chopped finely

  • 2 cup, shredded Napa cabbage, raw

  • 1/2 cup Button mushrooms sautéed, sliced thinly

DRESSING

  • 2 tbsp Apple cider vinegar

  • 2 whole lemon(s)Lemon juice

  • 6 tbsp Olive oil

  • 2 tsp Honey

  • 2 clove(s)Garlic, minced


Instructions

  1. Place all ingredients in large bowl and mix.

  2. Pour dressing over the quinoa and veggies. Serve immediately.


Advanced preparation:

  • 1 - 3 days prior [optional], Quinoa, uncooked 1 1/2 cup Cook dry quinoa according to package instructions in low sodium broth.


  • 1 day prior [optional], Apple cider vinegar 2 tbsp To make dressing: In a small bowl, mix together ingredients for dressing. Store in a glass jar in the fridge until ready to use.
