QUINOA SALAD WITH MIXED VEGGIES

Ingredients for 4 servings
SALAD
1 1/2 cup Quinoa, uncooked (2 cups cooked)
6 green onion (stem)green onion, scallion, ramp chopped finely
2 cup, shredded Napa cabbage, raw
1/2 cup Button mushrooms sautéed, sliced thinly
DRESSING
2 tbsp Apple cider vinegar
2 whole lemon(s)Lemon juice
6 tbsp Olive oil
2 tsp Honey
2 clove(s)Garlic, minced
Instructions
Place all ingredients in large bowl and mix.
Pour dressing over the quinoa and veggies. Serve immediately.
Advanced preparation:
1 - 3 days prior [optional], Quinoa, uncooked 1 1/2 cup Cook dry quinoa according to package instructions in low sodium broth.
1 day prior [optional], Apple cider vinegar 2 tbsp To make dressing: In a small bowl, mix together ingredients for dressing. Store in a glass jar in the fridge until ready to use.
