QUINOA SALAD WITH MIXED VEGGIES

Ingredients for 4 servings
SALAD
- 1 1/2 cup Quinoa, uncooked (2 cups cooked) 
- 6 green onion (stem)green onion, scallion, ramp chopped finely 
- 2 cup, shredded Napa cabbage, raw 
- 1/2 cup Button mushrooms sautéed, sliced thinly 
DRESSING
- 2 tbsp Apple cider vinegar 
- 2 whole lemon(s)Lemon juice 
- 6 tbsp Olive oil 
- 2 tsp Honey 
- 2 clove(s)Garlic, minced 
Instructions
- Place all ingredients in large bowl and mix. 
- Pour dressing over the quinoa and veggies. Serve immediately. 
Advanced preparation:
- 1 - 3 days prior [optional], Quinoa, uncooked 1 1/2 cup Cook dry quinoa according to package instructions in low sodium broth. 
- 1 day prior [optional], Apple cider vinegar 2 tbsp To make dressing: In a small bowl, mix together ingredients for dressing. Store in a glass jar in the fridge until ready to use.
